Melelehkan cokelat compound untuk dekorasi, gampang-gampang susah.Perlu ketelitian dan kesabaran.Inilah langkahnya.
  • Masukkan potongan cokelat compound ke dalam baskom stainless steel atau kaca. Gunakan wadah yang bersih dan bebas lemak.
  • Panaskan air dalam baskom lain yang berukuran sama dengan wadah cokelat. Jangan memanaskan air terlalu banyak, karena bisa masuk ke dalam wadah cokelat.
  • Letakkan baskom berisi potongan cokelat di atas air panas tadi.
  • Usahakan air jangan sampai mendidih, karena air bisa masuk ke dalam cokelat sehingga teksturnya kasar.Bila mendidih, segera matikan api.
  • Aduk hingga 80% cokelat leleh, kemudian angkat dan aduk hingga semua cokelat mencair dan suhu turun.
  • Jangan menghias menggunakan cokelat dalam keadaan panas, karena penampilan cokelat tidak mengkilap dan timbul garis-garis putih.

MELTING CHOCOLATE FOR DECORATION

Melting compound chocolate for cake decoration is rather easy but also rather difficult.Here are the steps:
  • Put the pieces of compound chocolate into the stainless steel or glass bowl. Use a clean and fat-free container.
  • Heat water in another basin which has the same size with the chocolate basin. Do not heat the water too much, because it can flow over the container of chocolate.
  • Place the bowl which contains chocolate pieces over the hot water.
  • Try not to boil water because if it is boiled the water could get into the chocolate so that it will has a coarse texture. If it is boiled, turn off the fire immediately.
  • Stir until 80% of the chocolate melts, then take from the hot water and stir until all the chocolate melts and the temperature drops.
  • Do not decorate the cake in which the chocolate is in hot conditions, because the appearance of the chocolate will not be shiny and there will appear white lines.
